About the Book

Prized for their nutritional health benefits, fermented foods offer high levels of vitamins and promote healthy bacteria in the digestive system. The age-old, simple technique of fermentation draws on the production of lactic acid to make these distinctive preserves.

Fermented Vegetables offers in-depth instructions for making sauerkraut, kimchi, pickles, pastes, chutneys, and whole-leaf ferments; 140 recipes use these techniques to preserve over 80 different vegetables and herbs. Once the techniques are mastered, the bounty of flavor is limitless. Readers will learn how to make sauerkraut using not only the traditional cabbage but also carrots, cauliflower, or fennel, while kimchi can be made with asparagus, garlic scapes, parsnips, or snow peas. There are also an additional 84 recipes for using the fermented foods in meals and snacks, including Au Gratin Potatoes, Annaliese’s Lentils and Rice, Fish Tacos, Egg Salad, and Zucchini Muffins.

Preserving enthusiasts, health-focused cooks, and lovers of ethnic food flavors will relish the breadth of recipes in this book.

About the Authors
Kirsten Shockey and Christopher Shockey got their start in fermenting foods with their farmstand food company, where they created over 40 varieties of cultured vegetables and krauts. When they realized their passion was for the process, they chose to focus on teaching the art of fermenting vegetables. They teach classes at their farm and host small farm workshops. Kirsten maintains their blog at www.fermentista.us. They live on a 40-acre hillside homestead in the Applegate Valley of southern Oregon
